Honey process is carried out on coffee that has just come out of the pulper dried in the sun without fermentation. Drying is also not done in the hot sun, but under cool weather. It sounds simple, but requires extra care and skill from coffee makers. Therefore, to date, this coffee variant is quite rare.
The procedure for processing coffee by honey process, briefly is as follows:
1. Pick cherry
2. Pulping by letting the fixed floor on cherry
3. Drying wet coffee beans around 2-3 days
4. Hulling
5. Drying Coffee beans
